When buying from a chest shop, left click the sign to bring up a preview window. This allows you to look at what you want to buy before making a purchase.

Once you are ready to buy, hold diamonds in your hand and right click the sign to open the purchase menu. Simply click on an item, and the correct diamond deposit will be transferred to the chest in exchange for the item.
